The recent opening of BIBIBOP at Holly Springs Towne Center brings a dedicated gluten-free kitchen to Southern Wake residents seeking wholesome, quick, and flavorful meal options.
Chef-curated and build-your-own bowls focus on healthy, unprocessed ingredients layered with Asian sauces in endless combinations. Founded by Charley Shin, a native of Seoul, South Korea, the concept has expanded rapidly to include four North Carolina locations.
Holly Springs general manager Brian Park explains, “Charley Shin is a big believer in healthy food, healthy body, happy person. Through serving great, healthy food, we really revitalize our guests as well as ourselves.”
“Korean cuisine is very flavorful,” Brian continues. “We incorporate all kinds of different flavors, like sour, spicy, sweet, salty, and umami flavors.”
BIBIBOP’s chef-curated bowls, such as the Fan Favorite with sweet potato noodles and yum yum sauce or the Seoul Bowl with Korean BBQ beef, purple rice, and spicy gochujang sauce, represent popular, customer-tested combinations.
“The Seoul Bowl would be a closer depiction to a bibimbap made in Korea,” Brian says. “The Fan Favorite is a bit more Americanized, so easier for people to try without that spicy flavor. It’s got our best toppings, our best sauces, and our best protein.”
“We really do invite everyone to create their own custom bowls and pick and choose whatever you like. You can get as many toppings as you like.”
BIBIBOP’s gluten-free, produce-forward menu easily accommodates vegetarian and vegan diets as well.
“Our founder understood that gluten-free options are very important to a lot of people. He really believed in the idea of feeding everybody, so he pushed for a gluten-free menu to be able to serve all guests.”
